Carne Asada Tacos

Mexican street food fans have loved carne asada tacos for a long time. Thick slices of grilled beef that has been marinated are put on warm corn tortillas and topped with fresh vegetables and cheese. These tacos taste great every day of the week and are packed with flavor.

Ingredients:

  • 1 lb carne asada thinly sliced beef
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco
  • Lime wedges for garnish

Instructions:

In a bowl, combine the orange juice, lime juice, minced garlic, chopped cilantro, cumin, chili powder, salt, and pepper to make the marinade

Place the thinly sliced carne asada in a resealable plastic bag and pour the marinade over it

Seal the bag and refrigerate for at least 30 minutes, or preferably, marinate overnight for more flavor

Preheat your grill or stovetop grill pan to high heat

Remove the carne asada from the marinade and grill for about 2-3 minutes per side, or until it reaches your desired level of doneness

Remove from heat and let it rest for a few minutes before slicing it into thin strips

While the carne asada is resting, warm the corn tortillas on the grill for about 30 seconds per side until they have grill marks and are heated through

To assemble the tacos, place a few strips of grilled carne asada on each tortilla

Top with diced onion, diced tomatoes, chopped cilantro, and crumbled queso fresco

Serve the carne asada tacos with lime wedges on the side for squeezing over the top

Thin Mint Cupcakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1/2 cup hot water
  • 1 sleeve of Thin Mint cookies crushed
  • 1 cup butter softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • Green food coloring optional
  • Crushed Thin Mint cookies for garnish

Instructions:

Warm up the oven to 350F 175C and put paper liners in a cupcake pan

Sift the cocoa powder, sugar, baking powder, baking soda, and salt together in a bowl

Add the eggs, buttermilk, vegetable oil, vanilla extract, and peppermint extract to a different bowl and mix them together using a whisk

Add the wet ingredients to the dry ones and mix them together until everything is well mixed

Add the crushed Thin Mint cookies and mix them in

Add the hot water slowly to the batter and mix it in until its smooth

Its okay that the batter isnt very thick

Fill up each cupcake liner about two thirds of the way to the top with batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

On a wire rack, let the cupcakes cool all the way down

Make the mint buttercream frosting while the cupcakes cool

Put the softened butter in a bowl and beat it until its smooth

Mix the powdered sugar and milk in slowly until the mixture is smooth and fluffy

If you want a minty color, you can add green food coloring

Place the mint buttercream frosting on top of each cupcake after it has cooled

You can pipe or spread it on

For an extra touch of flavor and texture, top with crushed Thin Mint cookies

Pour dressing over the salad and toss to coat

Top salad with cooked shrimp

Instructions:

Add the tofu cubes to the sauce and make sure each one is well covered

Let it sit for at least 30 minutes

In a pan, heat the vegetable oil over medium heat

Dice the tomato, onion, and bell pepper

Cook until it gets soft

Skewer marinated tofu cubes and cooked vegetables one after the other

Put the skewers in the pan and cook them for 5 to 7 minutes on each side, or until the vegetables are charred and the tofu is golden brown

Warm it up and serve it with your favorite vegan dipping sauce
