Ingredients:
- Small potatoes preferably new or red potatoes - 12
- Extra virgin olive oil - 1/4 cup
- Kosher salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary or thyme leaves optional - 1 tablespoon
Instructions:
Start by heating the oven up to 450F 230C
Put the potatoes in a big pot with salty water
As soon as it starts to boil, add the potatoes and cook for 15 minutes, or until they are soft but still firm
Before you put the potatoes on a baking sheet, make sure they are dry
To make each potato flat but still whole, gently press down on it with a potato masher or the bottom of a glass
Pour the olive oil over the potatoes and then add salt, pepper, and herbs, if you want
Warm the oven up and put the potatoes in it
Bake for 20 to 25 minutes, or until they are golden brown and crispy
As a tasty side dish or snack, serve hot
