Carne Asada Tacos

Mexican street food fans have loved carne asada tacos for a long time. Thick slices of grilled beef that has been marinated are put on warm corn tortillas and topped with fresh vegetables and cheese. These tacos taste great every day of the week and are packed with flavor.

Ingredients:

  • 1 lb carne asada thinly sliced beef
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco
  • Lime wedges for garnish

Instructions:

In a bowl, combine the orange juice, lime juice, minced garlic, chopped cilantro, cumin, chili powder, salt, and pepper to make the marinade

Place the thinly sliced carne asada in a resealable plastic bag and pour the marinade over it

Seal the bag and refrigerate for at least 30 minutes, or preferably, marinate overnight for more flavor

Preheat your grill or stovetop grill pan to high heat

Remove the carne asada from the marinade and grill for about 2-3 minutes per side, or until it reaches your desired level of doneness

Remove from heat and let it rest for a few minutes before slicing it into thin strips

While the carne asada is resting, warm the corn tortillas on the grill for about 30 seconds per side until they have grill marks and are heated through

To assemble the tacos, place a few strips of grilled carne asada on each tortilla

Top with diced onion, diced tomatoes, chopped cilantro, and crumbled queso fresco

Serve the carne asada tacos with lime wedges on the side for squeezing over the top
