Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup gluten-free bread crumbs
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup corn kernels frozen or fresh
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup gluten-free taco sauce
- 1/4 cup shredded cheddar cheese optional
- Gluten-free burger buns
- Lettuce, tomato, and other burger toppings of your choice
Instructions:
Use a fork or potato masher to mash the black beans in a large bowl until they are mostly smooth but still have some chunks
Cook the quinoa and put it in a bowl
Then add the gluten-free bread crumbs, red bell pepper, onion, cilantro, corn kernels, minced garlic, ground cumin, chili powder, paprika, salt, and pepper
Make sure to mix the ingredients together well
Add the gluten-free taco sauce and mix it in again until everything is well mixed
You can add shredded cheddar cheese if you want to
Form the mixture into patties about the size of burgers and place them on a baking sheet lined with parchment paper
Based on the size you want, you should be able to make about 4 to 6 patties
Put a skillet or grill over medium-high heat to heat it up, and lightly oil it
The veggie burger patties should be cooked for four to five minutes on each side, or until they are hot all the way through and have a nice sear on the outside
You can grill or toast gluten-free burger buns until they are golden brown and a little crispy
Put lettuce, a veggie burger patty, tomato, and any other toppings you want on top of the toasted bun to make your gluten-free taco veggie burgers
If you want, you can add more gluten-free taco sauce on top
