Vegan Mac & Cheese


Chinese Dating in Concord

Easy to make vegan mac and cheese with a rich sauce made from cashews.

Ingredients:

  • 2 cups cooked macaroni pasta
  • 1 cup raw cashews, soaked overnight or boiled for 10 minutes
  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste

Instructions:

Soaked cashews, almond milk, nutritional yeast, lemon juice, mustard, garlic, turmeric, salt, and pepper should all be put in a blender

If you need to, add more almond milk to get the consistency you want

Blend until smooth and creamy

Place the mixed ingredients in a saucepan and warm them up over medium-low heat

Pour the sauce over the cooked macaroni and mix it in well

Enjoy while hot
