Ingredients:
- 4 cups sweet corn kernels
- 1 cup peppered bacon, chopped
- 1 cup shrimp, peeled and deveined
- 1/2 cup onion, finely chopped
- 1/2 cup celery, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups heavy cream
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 1 teaspoon thyme leaves
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Over medium heat, cook the bacon in a large pot until it gets crispy
Take the bacon out of the pot and set it aside
Leave the bacon fat in the pot
Cut up some onion, celery, and garlic and add them to the pot
Cook the vegetables until they get soft
Add the flour and stir to make a roux
Cook for two minutes or until the roux is lightly browned
Slowly whisk in the chicken broth, making sure there are no lumps
Put in the potatoes and thyme
Bring to a low boil, then cook until the potatoes are soft
Add cooked bacon, shrimp, and sweet corn and mix well
For another 5 minutes, simmer until the shrimp are fully cooked
Add the heavy cream while stirring all the time
Add pepper and salt to taste
Let the chowder simmer for another 10 minutes, or until it gets a little thicker
Add butter and stir until it melts
If necessary, change the seasoning
Serve hot with fresh parsley chopped on top
The shrimp chowder, sweet corn, and bacon with pepper are all great
