In Italy, minestrone soup is a hearty soup made with beans, pasta, and vegetables. It tastes great, is good for you, and is perfect for a comforting meal.
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 zucchini, diced
- 1 can 14 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup small pasta such as macaroni or ditalini
- 1 can 15 oz kidney beans, drained and rinsed
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese optional, for serving
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the garlic and onion, and cook them until they get soft
Put in the zucchini, carrots, and celery
Cook for 5 minutes
Vegetable broth, pasta, kidney beans, basil, and oregano should all be stirred in now
Add pepper and salt to taste
Bring to a boil, then lower the heat and let it simmer for 15 to 20 minutes, or until the pasta is done and the vegetables are soft
If you want, you can serve it hot with grated Parmesan cheese on top
