Healthy Chili Soup

This healthy chili soup is a delightful twist on traditional chili, loaded with lean protein and vibrant veggies. Its a perfect balance of flavors and textures, making it a satisfying and nutritious meal.

Ingredients:

  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 1 cup corn kernels
  • 4 cups low-sodium chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Greek yogurt for topping

Instructions:

In a large pot, brown the ground turkey over medium heat

Add diced onion and garlic, cook until softened

Stir in chopped red and yellow bell peppers

Add black beans, kidney beans, diced tomatoes, and corn

Pour in low-sodium chicken broth and mix well

Season with chili powder, cumin, paprika, salt, and pepper

Simmer for 20-25 minutes, allowing flavors to meld

Serve hot, garnished with fresh cilantro and a dollop of Greek yogurt
