A comforting curry chicken dish made with coconut milk and spices that smells great and tastes great.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup coconut milk
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Heat olive oil in a large skillet over medium heat
Add diced onion and minced garlic, cook until softened, about 5 minutes
Stir in curry powder, cumin, coriander, turmeric, and cayenne pepper, cook for another 2 minutes until fragrant
Push onion mixture to the side of the skillet, add chicken breasts, and cook until browned, about 5 minutes per side
Pour in coconut milk and chicken broth, bring to a simmer, cover, and cook for 15-20 minutes until chicken is cooked through
Season with salt and pepper to taste
Garnish with fresh cilantro before serving
