Sweet Potato Queso Dip

This Sweet Potato Queso Dip is creamy, tasty, and doesnt have any nuts or dairy in it. Its great for parties or game nights. The nutritional yeast gives it a cheesy taste without any dairy, and the sweet potatoes make the base rich and velvety. The appetizer is delicious and will please everyone, even those who dont eat vegan food.

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1/2 cup nutritional yeast
  • 1/4 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • Optional toppings: chopped green onions, diced tomatoes, sliced jalapeos

Instructions:

For about 10 to 15 minutes, until soft, steam or boil the sweet potatoes

Put the tahini, water, lemon juice, garlic, smoked paprika, cumin, salt, and pepper into a blender or food processor

Add the cooked sweet potatoes and blend or process until smooth

If you need to, add more water to get the consistency you want

Blend until smooth and creamy

Move the mixture to a bowl for serving, and if you want, you can add extra toppings on top

You can dip the food in tortilla chips or sliced vegetables

Crash Hot Potatoes are a simple yet flavorful side dish that pairs well with any meal. They are crispy on the outside, creamy on the inside, and bursting with flavor from the olive oil, salt, pepper, and optional herbs.

Ingredients:

  • Small potatoes preferably new or red potatoes - 12
  • Extra virgin olive oil - 1/4 cup
  • Kosher salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary or thyme leaves optional - 1 tablespoon

Instructions:

Start by heating the oven up to 450F 230C

Put the potatoes in a big pot with salty water

As soon as it starts to boil, add the potatoes and cook for 15 minutes, or until they are soft but still firm

Before you put the potatoes on a baking sheet, make sure they are dry

To make each potato flat but still whole, gently press down on it with a potato masher or the bottom of a glass

Pour the olive oil over the potatoes and then add salt, pepper, and herbs, if you want

Warm the oven up and put the potatoes in it

Bake for 20 to 25 minutes, or until they are golden brown and crispy

As a tasty side dish or snack, serve hot

Ice Cream Tacos with Cookie Dough Shells

If you like Choco Tacos, you will love these ice cream tacos with cookie dough shells. I made the cookie dough shells myself and they are crispy. They are filled with creamy ice cream and have chocolate sauce and sprinkles on top. This dessert is great for taco night

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup mini marshmallows
  • 1
  • 5 quarts of your favorite ice cream
  • Sprinkles and chocolate sauce for garnish

Instructions:

Mix the softened butter, white sugar, and brown sugar together in a bowl until the mixture is smooth

Add the vanilla extract and a little salt, and mix well

Add the all-purpose flour slowly and mix it in until you have cookie dough

Add the mini marshmallows and chocolate chips and mix them in

To make taco shells, take small pieces of cookie dough and press each one into a thin, round shape

For about 10 minutes, or until they are golden brown, bake the cookie dough shells at 350F 175C

Take the shells out of the oven and let them cool all the way down

Put a scoop of your favorite ice cream in each cookie dough shell after it has cooled

Put chocolate sauce on top of the ice cream and then add any sprinkles you like

Enjoy your ice cream tacos with cookie dough shells right away

This Fig Galette recipe combines the sweet flavor of fresh figs with a flaky puff pastry crust, making for a simple yet elegant dessert.

Ingredients:

  • 1 sheet of store-bought puff pastry
  • 1 cup fresh figs, sliced
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg, beaten for egg wash
  • Optional: powdered sugar for dusting

Instructions:

Before you start cooking, heat the oven to 375F 190C

Put some flour on a surface and roll out the puff pastry sheet into a rough circle

Honey, brown sugar, lemon juice, and cornstarch should all be mixed together in a small bowl

Leave about an inch of space around the edges of the rolled-out puff pastry to spread the honey mixture evenly

Sprinkle the sliced figs on top of the honey mix

To make a rustic crust, fold the edges of the pastry over the figs

Beat an egg and brush it around the edges of the pastry to make them golden

Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the pastry is golden brown and the figs are soft

After baking, let the galette cool down a bit before cutting and serving

If you want, you can sprinkle powdered sugar on top before serving

Cut it up and enjoy

Vegan Mac & Cheese

Ingredients:

  • 2 cups cooked macaroni pasta
  • 1 cup raw cashews, soaked overnight or boiled for 10 minutes
  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste

Instructions:

Soaked cashews, almond milk, nutritional yeast, lemon juice, mustard, garlic, turmeric, salt, and pepper should all be put in a blender

If you need to, add more almond milk to get the consistency you want

Blend until smooth and creamy

Place the mixed ingredients in a saucepan and warm them up over medium-low heat

Pour the sauce over the cooked macaroni and mix it in well

Enjoy while hot

Instructions:

Warm up the oven to 350F 175C and put paper liners in a cupcake pan

Whisk the flour, baking powder, and salt together in a bowl

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One at a time, add the eggs and beat well after each one

Add the vanilla extract and mix well

Slowly add the dry ingredients to the wet ingredients, mixing them in with the milk every so often

Start with the dry ingredients and end with the milk

Dont mix any further than that

Fill each cupcake liner about two thirds of the way to the top with batter

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool in the pan for a few minutes

Then, move them to a wire rack to finish cooling

For the buttercream frosting made of Swiss meringue: Put egg whites and granulated sugar in a bowl that can handle heat

Place the bowl over a pot of water that is just starting to boil

Make sure the bowls bottom doesnt touch the water

Always stir the mixture with a whisk until the sugar is completely dissolved and a candy thermometer reads 160F 71C

Take the mixture off the heat and put it in a mixing bowl

Whip the mixture at a high speed until stiff peaks form and it has reached room temperature

Whip the frosting until it is smooth and creamy

Add the softened butter a few tablespoons at a time while whipping

The vanilla extract should be mixed in well

Spread or pipe the Swiss Meringue Buttercream Frosting on the cupcakes after they have cooled

Decorate however you like, and have fun

  • 1 cup cooked quinoa
  • 1/2 cup gluten-free bread crumbs
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup corn kernels frozen or fresh
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup gluten-free taco sauce
  • 1/4 cup shredded cheddar cheese optional
  • Gluten-free burger buns
  • Lettuce, tomato, and other burger toppings of your choice

Instructions:

Use a fork or potato masher to mash the black beans in a large bowl until they are mostly smooth but still have some chunks

Cook the quinoa and put it in a bowl

Then add the gluten-free bread crumbs, red bell pepper, onion, cilantro, corn kernels, minced garlic, ground cumin, chili powder, paprika, salt, and pepper

Make sure to mix the ingredients together well

Add the gluten-free taco sauce and mix it in again until everything is well mixed

You can add shredded cheddar cheese if you want to

Form the mixture into patties about the size of burgers and place them on a baking sheet lined with parchment paper

Based on the size you want, you should be able to make about 4 to 6 patties

Put a skillet or grill over medium-high heat to heat it up, and lightly oil it

The veggie burger patties should be cooked for four to five minutes on each side, or until they are hot all the way through and have a nice sear on the outside

You can grill or toast gluten-free burger buns until they are golden brown and a little crispy

Put lettuce, a veggie burger patty, tomato, and any other toppings you want on top of the toasted bun to make your gluten-free taco veggie burgers

If you want, you can add more gluten-free taco sauce on top
